A different take on a classic middle eastern dish. Soft, delicate vege Koftas packed full of protein and healthy carbs in a rich tomato sauce that packs a punch.


400g Can Lentils
1 Cup Walnuts
1 Large Sweet Potato, diced small
2 Onions, roughly chopped
4 Cloves Garlic, roughly chopped
1 Capsicum, roughly chopped
1 Red Chili, deseeded and chopped
Handful Parsley, roughly chopped
Plain Flour (for frying)
Vegetable Oil (for frying)
1 Tbsp Onions, diced
1 Tbsp Brown Sugar
1 Tsp Sumac
1 Tsp Garam Masala
1 Tsp Cumin Seeds
1/2 Tsp Ground Turmeric
Pinch Salt
Pinch Cracked Black Pepper
400g Can Diced Tomatoes
1 Cup Water
Half Red Onion, Diced
1 Tbsp Olive Oil
1 Tomato, diced
Handful Parsley, chopped
1 Capsicum, diced
Pinch Freshly Cracked Black Pepper
Juice of Half a Lemon
Greek Yoghurt
